Sweet Blueberry muffin

Blueberry muffins

Ingredients for making 12 large muffins

2 cups of sugar

2 teaspoons baking powder

¼ teaspoon salt

¼ teaspoon nutmeg

2 sachets stevia

½ a cup canola oil

1 teaspoon vanilla puree

1 egg

1cup 1.7% yogurt  (different fat percentage can be used)

1 cup frozen blueberries


Preparation instructions

In a bowl, stir together flour’ baking powder, salt , nutmeg and Stevia

In a separate bowl beat together oil, vanilla, egg and yogurt

Add the dry ingredients to the wet ingredients and stir just until unified

Fold in the blueberries

Transfer the mixture to baking dish with greased paper cupcake cups for each muffin

Bake in a 180ºC oven for 12 to 17 min. or until muffins turn golden
